    I have made this soup slicing the mushrooms into larger pieces.

Ingredients:

  1. 8 - 8medium Mushrooms finely chopped
  2. 2 tablespoons - butter
  3. 2 tablespoons - flour
  4. 1 1/8 - onion finely chopped
  5. 2 cups - beef broth
  6. 1/2 cups - water
  7. 2 tablespoons - minute rice
  8. 1 tablespoons - parsley

Directions:

Melt butter in a saucepan. Add onion and allow it to soften. Add mushrooms. Cover with a piece of foil so that foil is touching the mushrooms and steam over low heat for ten minutes. Remove foil, stir in flour and add the remaining ingredients. Cover and simmer for twenty minutes, Garnish with finely chopped parsley.
