Mushroom Orzo

  1. 1/2 cups - butter divided
  2. 1/4 cups - sweet onion diced
  3. 1 cups - orzo pasta uncooked
  4. 1/2 cups - fresh mushrooms sliced
  5. 1 cups - water
  6. 1/2 cups - white wine
  7. - garlic powder to taste
  8. - salt and pepper to taste
  9. 1/2 cups - Parmesan cheese grated
  10. 1/4 cups - fresh parsley


Melt half the butter in a skillet over medium heat. Stir in the onions, and cook until golden brown. Mix in orzo, mushrooms, and remaining butter. Cook and stir 5 minutes until butter is melted and mushrooms are tender.
Pour water and wine into skillet and bring to a boil. Reduce heat to low. Season with garlic powder, salt and pepper. Cook 7-10 minutes, until orzo is al dente. Stir in Parmesan cheese and parsley before serving.
