Mushroom and Leek Topped Tilapia

Ingredients:

  1. 2 cups - sliced shiitake mushrooms
  2. 2 - leeks sliced
  3. 2 tablespoons - butter
  4. 2 tablespoons - chopped fresh dill weed
  5. 1 pounds - tilapia or other thin fish fillets

Directions:

Preheat grill to medium. Cook mushrooms and leeks in butter until tender. Stir in dill weed.

Tear four 36-x-18-inch pieces of foil. Fold each in half to make an 18-inch square. Spray with nonstick spray coating.

Place one of the fish fillets on each square. Top each one with some of the mushroom mixture. Bring up opposite edges of foil; seal with a double fold. Fold remaining edges together to completely enclose fish, leaving space for steam to expand.

Place packets on grill and cook, covered, for 10 minutes or until fish flakes easily when tested with a fork (145° F). Open packets carefully.
