Notes:
NOTE: For Cinnamon Simple Syrup, combine 1 C. sugar, 1/2 C. water and 2 cinnamon sticks. Bring to a boil. Cool for 30 min. Syrup can be stored in the refrigerator for up to 1 month. ANOTHER NOTE: This recipe is easily doubled.

Ingredients:
- 2 - Cinnamon sticks
- 2 - Star anise
- 5 - Juniper berries
- 1 teaspoons - Coriander seeds
- 5 - Cloves
- 1 bottles - Zinfandel wine
- - Peel of 1 orange
- - Peel of 1 lemon
- 1/2 cups - Brandy
- 1/4 cups - Cinnamon Simple Syrup See note below
- - Cinnamon sticks For garnish
- - Orange zest For garnish
Directions:
1. Combine cinnamon sticks, star anise, juniper berries, coriander seeds and cloves in a skillet. Toast until fragrant, 2-3 min. Combine spices in cheesecloth and tie to close.
2 Pour wine in a large pot and add orange and lemon peels, brandy and Cinnamon Simple Syrup. Heat it to 140-160 degrees and turn off.
3. Add spices in cheesecloth and allow to steep in wine for at least 1 hour or preferably overnight.
4. Remove spice bag or strain. Garnish with a cinnamon stick or orange zest.
5. Serve warm, not hot.
