Ingredients:

  1. 2 1/2 pounds - carrots
  2. 2 - juice from 1/2 small lemon
  3. 1 tablespoons - fresh cilantro or parsley

Directions:

Mix all ingredients in a large bowl. Cover and let marinate 2 hours or overnight.
