Morning Glory Muffins

Ingredients:

  1. 2 cups - flour
  2. 2 teaspoons - baking soda
  3. 1/4 teaspoons - salt
  4. 2 teaspoons - cinnamon
  5. 1 cups - sugar
  6. 2 cups - grated carrots
  7. 1/2 cups - raisins
  8. 1/2 cups - chopped nuts
  9. 1/2 cups - coconut
  10. 1 - apple grated, with or without peel
  11. 3 - eggs
  12. 1/2 cups - vegetable oil
  13. 2 teaspoons - vanilla
  14. 1/4 cups - any fruit juice optional, as needed, if batter is too thick

Directions:

Toss dry ingredients, fruits and nuts together.

In a separate bowl, stir wet ingredients together; add to dry ingredients.

Add 1/4 cup or more of any fruit juice if the batter is too dry.

Bake at 350 degrees F for approximately 20 minutes.
