Ingredients:
- 2 cups - flour
- 2 teaspoons - baking soda
- 1/4 teaspoons - salt
- 2 teaspoons - cinnamon
- 1 cups - sugar
- 2 cups - grated carrots
- 1/2 cups - raisins
- 1/2 cups - chopped nuts
- 1/2 cups - coconut
- 1 - apple grated, with or without peel
- 3 - eggs
- 1/2 cups - vegetable oil
- 2 teaspoons - vanilla
- 1/4 cups - any fruit juice optional, as needed, if batter is too thick
Directions:
Toss dry ingredients, fruits and nuts together.
In a separate bowl, stir wet ingredients together; add to dry ingredients.
Add 1/4 cup or more of any fruit juice if the batter is too dry.
Bake at 350 degrees F for approximately 20 minutes.
