Ingredients:
- 2 whole - Eggs
- 3/4 cups - Canola oil
- 1/4 cups - Milk
- 1 teaspoons - Vanilla extract
- 2 cups - Flour
- 1 cups - Brown sugar
- 2 teaspoons - Baking soda
- 2 teaspoons - Cinnamon
- 1/2 teaspoons - Salt
- 2 whole - Medium carrots Shredded
- 1/2 cups - Shredded coconut
- 1/2 cups - Golden raisins
- 1/2 cups - Slivered almonds Divided use
Directions:
1. Preheat oven to 350. Spritz 18 muffin cups w/ cooking spray. Place a paper liner in each.
2. In large bowl, beat eggs, oil, milk and vanilla on medium for 1 minute. Add flour, brown sugar, baking soda, cinnamon and salt. Beat just until combined; do NOT overmix! Add carrots, coconut, raisins and half the almonds. Spoon batter into liners. Sprinkle w/ remaining almonds.
3. Bake for 20 min. or until muffin tops spring back when pressed. Cool on wire racks.
