Morning Glory Muffins

Ingredients:

  1. 2 whole - Eggs
  2. 3/4 cups - Canola oil
  3. 1/4 cups - Milk
  4. 1 teaspoons - Vanilla extract
  5. 2 cups - Flour
  6. 1 cups - Brown sugar
  7. 2 teaspoons - Baking soda
  8. 2 teaspoons - Cinnamon
  9. 1/2 teaspoons - Salt
  10. 2 whole - Medium carrots Shredded
  11. 1/2 cups - Shredded coconut
  12. 1/2 cups - Golden raisins
  13. 1/2 cups - Slivered almonds Divided use

Directions:

1. Preheat oven to 350. Spritz 18 muffin cups w/ cooking spray. Place a paper liner in each.

2. In large bowl, beat eggs, oil, milk and vanilla on medium for 1 minute. Add flour, brown sugar, baking soda, cinnamon and salt. Beat just until combined; do NOT overmix! Add carrots, coconut, raisins and half the almonds. Spoon batter into liners. Sprinkle w/ remaining almonds.

3. Bake for 20 min. or until muffin tops spring back when pressed. Cool on wire racks.
