Brief Description
Here is Mom and Grandma Flo's lasagne recipe that Erick has always loved. Since it takes time, I always make 3 and freeze two of them for another day. The quantities in this recipe are for 3 casserole dishes (2 large and 1 small).

To make ahead: Prepare as above, except, after assembling, cover with plastic wrap and then foil. Freeze. When you're ready to bake it, defrost for a short while but it doesn't have to be totally defrosted. Remove plastic wrap and recover with foil. Bake in a 375° oven for 35 minutes. Uncover and bake for about 20 minutes more or till heated through.

For meat sauce, in a very large saucepan or stock pot, cook meat, onion, and garlic til meat is brown and onion is tender. Drain fat. Stir in undrained tomatoes; tomato sauce; tomato paste; basil; oregano; salt and pepper. Bring to boiling; reduce heat. Cover and simmer for 15 - 30 minutes; stir occasionally. Meanwhile, cook lasagna noodles according to package directions. drain.
For filling, combine egg, cottage cheese, 1/4 cup of the Parmesan or Romano cheese, and the parsley flakes.
Layering instructions:
First, put a small amount of meat sauce at the bottom of the pans (about 1/2 cup for a large pan).
Second, lay down a layer of baked noodles.
Third, spread half the cottage cheese filling.
Fourth, top with half the meat sauce.
Fifth, top with half the mozzarella cheese.
Repeat layers starting with the noodles again.
Sprinkle the remaining Parmesan cheese atop.
Bake in a 375° oven for 30 to 35 minutes or till heated through. Let stand 10 minutes.
