Ingredients:
- 2 pounds - grass-fed beef or pork
- 1 1/2 teaspoons - sea salt
- 1 teaspoons - ground black pepper
- 2 - large pastured eggs
- 1 - medium onion peeled, finely chopped
- 2 cups - mushrooms finely chopped
- 1/2 cups - chopped or grated carrots
- 2 cups - loosely packed spinach finely chopped
- 1 teaspoons - dry thyme
- 3 cloves - garlic peeled, minced
- 1 1/2 tablespoons - Dijon mustard
Directions:
Preheat oven to 350 degrees F.
In a large bowl, combine all of the ingredients above, and mix well until everything is blended together evenly.
Divide meat mixture evenly into 12-count muffin tin.
Bake for 25 to 30 minutes or until meat is cooked through.
Leftovers can be frozen or stored in fridge for up to 5 days.
