Brief Description
An all time favorite hearty (but vegetarian) soup. Definitely comfort food!

3 T. olive oil, 1/2 c. brown rice, 5 c. vegetable broth, 1c. dry red wine, 1 medium onion, 8 oz package mushrooms, 1c. sliced carrots, 1 red bell pepper, 2 small to med. zucchini, 1 can diced tomatoes, 1 can kidney beans, 1 can white beans, Italian seasons: basil, thyme, garlic, oregano, rosemary, cayenne pepper

Easy for crowds. You can add broccoli as well and it is good. I have also substituted tortelini instead of rice. The rice makes it a heartier dish. Garlic cheese biscuits make a great side to this.

Directions:
Heat oil and garlic in a heavy, nice size pan (I like to use my dutch oven).
Add to hot oil the rice, onion, mushrooms, carrots, and pepper and let it start to brown. Then add canned tomatoes, canned beans, vegetable stock, red wine and the seasonings. Let boil. Add zucchini, cover and let simmer until vegetables are done and rice is cooked. (If using a dutch oven cover and place in the oven at 350 for an hour). Parmesan cheese can be sprinkled on top as a condiment.
