Ingredients:
- 2 tablespoons - Olive oil
- 1 - medium onion diced (about 1 cup)
- 2 - medium carrots diced (about 1 cup)
- 1 stalks - Celery diced (about 3/4 cup)
- 2 - Medium Zucchini diced
- 1 cloves - Garlic minced
- 3 - medium potatoes unpeeled and diced (about 3/4 pound)
- 3 cups - Savoy cabbage thinly sliced
- 15 ounces - Can cannellini beans rinsed and drained
- 15 ounces - Can diced tomatoes undrained
- 2 cans - Reduced-sodium chicken broth
- 3 cups - Water
- 1/2 teaspoons - Dried Rosemary crushed
- 1/2 teaspoons - Salt
- 1/2 teaspoons - Pepper
- - Grated Parmesan cheese optional

Directions:
1. Heat oil in a large stockpot over medium heat. Add onion; cook, stirring occasionally, until softened, about 6 minutes.
2. Add carrots and celery; cook, stirring occasionally, 3 minutes. Add remaining ingredients, except cheese.
3. Cover and bring to a boil; reduce heat and simmer gently 1 to 2 hours. Serve with Parmesan cheese, if desired.
