You can freeze bananas that are ripening and use them in this recipe; the peel will turn black when frozen. Simply remove from freezer, thaw under slightly warm water, cut off the end of the banana and squeeze the fruit out of the peel. You will always have bananas on hand for this quick-to-make recipe.

Ingredients:
- 3 - to 4 ripe bananas
- 1 cups - sugar
- 1 - egg
- 1 1/2 cups - flour
- 1/4 cups - melted butter
- 1 teaspoons - baking soda
- 1 teaspoons - salt
- - nuts, raisins or chocolate chips optional add-ins, as desired
Directions:
Preheat oven to 325 degrees F. Butter and flour a 9-by-5-by-3-inch loaf pan.
Mash bananas in a large bowl. Add remaining ingredients and mix well.
Pour batter into pan and bake for one hour. (You can also use this batter to make muffins; start baking time at 30 minutes and then check until done).
