Middle Eastern Grilled Chicken

Ingredients:

  1. 1 pounds - boneless, skinless chicken breast cut in 2-inch cubes
  2. 2/3 cups - low-fat plain yogurt
  3. 1 tablespoons - fresh lime juice
  4. 1 teaspoons - ginger root, fresh grated, or dry equivelent
  5. 2 cloves - garlic minced or dry equivelent
  6. 1 teaspoons - ground cumin
  7. 1 teaspoons - ground coriander
  8. 1/4 teaspoons - black pepper

Directions:

In a bowl or ziploc bag, whisk together everything but the chicken, then toss the chicken to coat. Cover if using bowl and marinate for 1-24 hours. Preheat grill or non-stick skillet. Put chicken on skewers and grill or cook in hot pan for 5-7 minutes, until chicken is done, turning frequently.
