Microwave Lava Cake

Ingredients:

  1. 4 tablespoons - self-rising flour (if using all purpose, add a pinch of baking powder)
  2. 3 tablespoons - cocoa powder
  3. 4 tablespoons - brown sugar
  4. 1 - beaten egg
  5. 1 tablespoons - canola or vegetable oil
  6. 1 teaspoons - vanilla
  7. 3 tablespoons - milk
  8. - caramel sauce
  9. - confectioner's sugar

Directions:

Add all ingredients except the caramel and the powdered sugar to a bowl and mix together.
Spray two small ramekins with non-stick baking spray and fill about 2/3 full.
Spoon some caramel in the middle of each ramekin. (I did about 2 teaspoons of caramel in each ramekin.)
Cover the caramel completely with the remaining mixture.
Microwave about 40-60 seconds. (The caramel in mine boiled up and over the ramekin, but we spooned the overflow back into the ramekin.)
Sprinkle with powdered sugar immediately.
Cool for a minute or two before serving.
