Ingredients:
- 1/3 cups - cider vinegar
- 1 tablespoons - Dijon mustard
- 2 teaspoons - honey
- 1/4 cups - vegetable oil
- 2 pounds - Russet or Yukon Gold potatoes
- 8 slices - bacon
- 4 - green onions chopped
Directions:
Whisk together dressing ingredients and set aside.
Cook slices of bacon in the microwave; cut into 1/2-inch pieces and set aside.
Wash potatoes; puncture each one with a fork in 4 places (top, bottom and sides) to allow steam to escape while it cooks. Place potatoes in the microwave on a microwave-safe plate, and cook on High for 7 minutes. Turn them over and cook on High for another 7 minutes or until they pierce easily in the center with a knife (cooking times will vary depending on strength of microwave and size of potatoes).
Cut the potatoes into 3/4-inch slices, crosswise; remove peel from each slice (if desired), then continue cutting the potato into 3/4-inch cubes.
Place warm potato cubes in a bowl; add bacon, green onions and dressing. Toss to combine.
Serve either warm or at room temperature.
