Microwave Bean and Rice Burrito Bowl

  1. 1 packages - Ready Rice (microwaveable rice)
  2. 1 cans - black beans rinsed and drained
  3. 1/2 cups - shredded cheese
  4. 1/4 cups - salsa
  5. 1/2 - avocado diced or sliced
  6. - diced tomatoes, green onion, sour cream, diced cooked chicken optional additions


Cook rice according to package directions.

In a large microwave-safe bowl, combine rice, beans, cheese, salsa (and chicken, if using); heat in 30-second intervals and stir until cheese is melted and all is heated through.

Top with avocado and any other desired toppings.
