Mexican Tuna Salad

Ingredients:

  1. 1 cans - drained tuna
  2. 1/2 - avocado diced
  3. 1 cups - chopped cabbage
  4. 1 - jalapeno sliced
  5. 2 - chopped scallions
  6. 1/4 cups - extra virgin olive oil
  7. 2 teaspoons - lime zest
  8. 1 tablespoons - lime juice

Directions:

In a small bowl, mix together the olive oil, lime zest and lime juice; set aside.

In a separate bowl, mix together the tuna, avocado, cabbage, jalapeno and scallions.

Pour in the olive oil mixture and mix gently until thoroughly combined.

Serve and enjoy!
