Meringue Roll with Strawberries & Cream

Ingredients:

  1. 4 - egg whites
  2. 1 cups - fruit sugar
  3. 1/4 cups - icing sugar sifted
  4. 1 cups - whipped cream
  5. 1 teaspoons - vanilla
  6. 2 cups - strawberries sliced
  7. 4 - egg whites
  8. 1 cups - fruit sugar
  9. 1/4 cups - icing sugar sifted
  10. 1 cups - whipped cream
  11. 1 teaspoons - vanilla
  12. 2 cups - strawberries sliced

Directions:

1. Beat egg whites until opaque. Add sugar all at once and continue beating 3-4 minutes until thick.
2. Spread in 10" x 15" jelly roll lined with parchment paper and brushed with vegetable oil.
3. Bake in preheated over 350°F oven 12 minutes.
4. Dust top with 2 tablespoons icing sugar and turn out onto tea towel. Remove parchment paper.
5. Whip cream and icing sugar and vanilla until firm but not stiff.
6. Spread meringue with cream and sliced strawberries.
7. Use tea towel to wrap and roll meringue into a jelly roll. Refrigerate.
