Ingredients:
- 1/2 pounds - ground beef
- 3/4 cups - chopped yellow onion
- 2 - finely chopped anaheim chilies
- 1 - finely chopped poblano chile
- 1 1/4 cups - diced tomatoes
- 1/2 cups - tomato paste
- 2 tablespoons - chicken bouillon granules
- 3 quarts - chicken stock
- 1/2 teaspoons - ground cumin or a little more, if desired
- 4 sprigs - fresh cilantro chopped
- 2 cloves - garlic finely chopped
- - salt and pepper to taste
- 6 - white corn tortillas
- 6 - red corn tortillas
- 12 ounces - grated cheddar and / or Monterey Jack cheese
Directions:
Brown the meat in a large stockpot; drain off all fat. Add onions, chilies and tomatoes, and saute over medium heat until onions are soft.
Add tomato paste and continue to saute until paste is well blended. Do not allow paste to burn.
Add chicken bouillon granules, stock, cumin, cilantro, garlic, salt and pepper. Bring to a boil and simmer for 15 minutes. Skim off any excess fat.
Fill individual serving bowls up to 1 inch from top; garnish with grated cheese and tortilla strips.
