Mediterrean Style Couscous

Ingredients:

  1. 1 - Orange Bell Pepper Chopped
  2. 1 - Onion Chopped
  3. 1 jars - Roasted Bell Pepper Chopped
  4. 3 cans - Ripe Black Olives Sliced
  5. 1 bulbs - Garlic Chopped
  6. 1 packages - Feta Cheese Crumbled
  7. 1 bunches - Parsley Chopped
  8. 1 - Lemon Juiced
  9. 2 tablespoons - Olive Oil

Directions:

Saute onion and bell pepper in olive oil until soft. Add garlic and cook 2 more minutes or until fragrant.

Add roasted peppers and black olives, including liquid of both. This adds to the flavor.

Continue by following directions on box for cooking couscous. When adding couscous to water also add parsley.

Just before serving squeeze lemon into couscous and stir gently.
Top with feta cheese.
