Mediterranean Roasted Beets

Ingredients:

  1. 1 3/4 cups - beets cut in 1/2-inch cubes
  2. 1 1/2 teaspoons - extra virgin olive oil
  3. 1 tablespoons - fresh parsley finely chopped
  4. 1 tablespoons - fresh lemon juice
  5. - Himalayan salt and herbal seasoning to taste

Directions:

Preheat oven to 400 degrees F. Toss beet cubes with oil, salt, and seasoning. Spread in a single layer on baking sheet and roast for 45 minutes or until tender.
Remove from oven and toss with lemon and parsley.
Serve warm or chilled.
