Mediterranean Couscous

Ingredients:

  1. 1/3 cups - uncooked couscous
  2. 1 cans - 14.5 oz. artichoke quarters rinsed, drained, chopped
  3. 4 ounces - Italian plum tomatoes chopped (about 1 cup)
  4. 1/2 - medium cucumber peeled, diced
  5. 2 tablespoons - finely chopped red onion
  6. 2 tablespoons - snipped fresh parsley
  7. 2 tablespoons - fresh lemon juice
  8. 1 tablespoons - chopped fresh oregano OR 1 tsp dried crumbled oregano
  9. 1 tablespoons - minced fresh mint leaves OR 1 tsp dried crumbled mint
  10. 1 ounces - blue cheese crumbled

Directions:

Prepare the couscous using the package directions, omitting the salt. Fluff with a fork and set aside to cool.

Meanwhile, in a medium bowl, stir together the remaining ingredients except the blue cheese. Gently stir in the cooled couscous, then the blue cheese. Serve immediately for peak flavor.
