Meatless Chili

Ingredients:

  1. 1 cups - chopped onion
  2. 1 cloves - garlic minced
  3. 1 - large green pepper chopped
  4. 1 - large bay leaf crushed
  5. 2 cans - or 3 cans kidney or pinto beans
  6. 1 teaspoons - curry
  7. 1 1/2 cups - chopped celery
  8. 3 - large tomatoes OR one 15 oz. can stewed tomatoes chopped
  9. - chili powder to taste
  10. - salt and pepper to taste
  11. 1 cans - 29 oz. tomato sauce
  12. 1 teaspoons - basil
  13. 1 tablespoons - paprika
  14. - cooked whole wheat noodles OR brown rice for serving with, if desired

Directions:

Saute onion, garlic and green pepper.

Add tomatoes, sauce, celery, beans and seasonings. Simmer 1/2 hour.

Serve over whole wheat noodles or brown rice.
