Meatball Minestrone Soup

Ingredients:

  1. 1 pounds - frozen meatballs
  2. 28 ounces - can of diced tomatoes undrained
  3. 1/2 pounds - carrots peeled and sliced
  4. 3 cups - fresh green beans ends cut off and chopped
  5. 1 ounces - fresh baby spinach
  6. 1 - small onion peeled and chopped
  7. 4 cloves - garlic
  8. 15 ounces - can of kidney beans drained and rinsed
  9. 15 ounces - can of cannellini beans drained and rinsed
  10. 1 teaspoons - honey
  11. 2 tablespoons - Italian seasonings
  12. 1 - bay leaf
  13. 1/4 teaspoons - ground black pepper
  14. 8 cups - chicken broth not needed until day of cooking
  15. 1 cups - uncooked elbow macaroni not needed until day of cooking

Directions:

Thaw overnight in refrigerator or in water. Add to crockpot with chicken broth. Cook on low setting for 8 hours. Add pasta and cook for additional 30 minutes on high setting.
