Ingredients:
- 4 - sweet potatoes
- 4 tablespoons - sour cream
- 2 tablespoons - butter
- - salt
- - pepper
Directions:
Peel and dice sweet potatoes into 1/2 in cubes. Place in a large pot with enough salted water to cover by 2 in. Bring to boil and cook until tender, about 15 mins. Drain thoroughly and return to pot. Using potato masher or fork, mash with 2 tbsp of butter and 4 tbsp of sour cream until smooth. season with salt and pepper.
