If I'm not serving the potatoes with gravy, sometimes I also add a 1/4 cup of sour cream and 1/4-1/2 cup of shredded cheddar cheese for a little something different. Love having the peels left on the potatoes; makes a more hearty dish.

Ingredients:
- 7 - medium russet potatoes cut up, not peeled
- 1/2 cups - margarine or butter
- 2 tablespoons - milk
- - salt and pepper to taste
Directions:
Cut up russet potatoes and place in large saucepan; add enough water to pan to just cover potatoes. Cook on high heat until comes to a boil; reduce heat slightly and let boil 'til potatoes are tender (about 10-12 minutes).
Remove from heat and drain water from pan. Add margarine, milk, and salt and pepper to potatoes. Beat with electric mixer 'til thoroughly combined and smooth. Taste test to see if more butter or salt and pepper is needed, adjust accordingly.
