Ingredients:
- 2 cups - mashed potatoes
- 3 - egs
- 1/2 cups - shredded cheddar cheese
- 1/2 cups - steamed broccoli
- - salt and pepper
Directions:
Preheat oven to 400 degrees F and spray muffin tin with non-stick cooking spray.
Stir together mashed potatoes, eggs and cheese in a mixing bowl. Gently stir in steamed broccoli (to steam broccoli, add 2-3 tablespoons water to broccoli in a microwave-safe dish and cook for 2 to 3 minutes in the microwave until softened).
Season with salt and pepper as needed. Divide into 6 large muffin tins or 12-18 mini-muffin tins, depending on preferred size.
Bake in preheated oven for 20 minutes; serve immediately.
