Ingredients:
- 5 cups - cauliflower chopped
- 4 tablespoons - heavy whipping cream
- 3 tablespoons - butter
- 5 cloves - garlic minced
- 2 teaspoons - rosemary
- 3 tablespoons - parmesan cheese
- 1/2 teaspoons - pepper
- 2 cups - broth, stock, or pan drippings
- 1/2 cups - heavy whipping cream
- 4 tablespoons - butter
- 1 teaspoons - pepper
- 1/2 teaspoons - xantham gum for thickening
Directions:
Mashed Cauliflower:
Fill a large pot with water and bring to a boil; add chopped cauliflower and boil for 15 minutes or until tender. Drain cauliflower and place in food processor or sturdy blender.
Cook butter with garlic and rosemary in a saucepan over medium heat for 2-3 minutes. Add melted butter, garlic and rosemary to processor or blender and pulse several times until ingredients are well combined.
Add cream, parmesan, salt and pepper to mixture and process until smooth and creamy. Add extra salt, after tasting, if needed.
Gravy:
Combine cream, butter, and broth in a sauce pan over medium heat. Bring to a boil and then reduce to simmer for 10 to 15 minutes. Add xantham gum and pepper, stirring until gravy thickens and reduces down to your desired consistency.
