Ingredients:
- - a lean cut of steak, chicken, pork or portobello mushrooms
- - garlic olive oil
- - Persian lime olive oil
- - your favorite Olive Tap grilling rub
- 1 - onion halved and sliced
- 1 - bay leaf
- - green, red and yellow bell peppers
- 3 - or 4 tomatoes
- - soft tortilla shells
- - any pepper olive oil
Directions:
Rub the meat or mushroom with garlic olive oil, lime olive oil and the Olive Tap grilling rub, then grill to your liking.
Meanwhile, heat some garlic olive oil and lime oil in a large skillet. Saute the onions until they begin to soften. Add the peppers and bay leaf and cook until the peppers begin to soften. Turn off heat and add tomatoes.
Slice the meat or mushrooms into strips. Place the strips on the tortillas. Add the vegetables and a drizzle of pepper oil. Fold tortillas to complete the fajitas.
