Can substitute flat loin roast. Cooking time is approximate. Smaller will take less time, larger will take more time.

Ingredients:
- 1/2 cups - soy sauce
- 1/2 cups - dry sherry
- 2 cloves - garlic minced
- 1 tablespoons - dry mustard
- 1 tablespoons - ginger
- 1 teaspoons - crushed thyme
- 4 1/2 pounds - pork loin roast boned, rolled and tied
- 1/2 cups - soy sauce
- 1/2 cups - dry sherry

- 1 teaspoons - crushed thyme
- 4 1/2 pounds - pork loin roast boned, rolled and tied
Directions:
1. Combine all ingredients except roast. Mix well.
2. Place roast in large ziploc bag, set in bowl. Pour in marinade and close bag tightly.
3. Refrigerate overnight. Turn meat occasionally.
4. Remove meat from marinade and place on rack in shallow roasting pan.
5. Roast uncovered at 325° F until thermometer registers 145° (for rare) to 160° (for medium). Baste occasionally during last hour of roasting.
