Ingredients:
- 25 pounds - sweet potatoes scrubbed
- 2 1/4 cups - butter
- 2 1/4 cups - maple syrup
- 1/8 cups - orange zest
- 1/8 cups - balsamic vinegar
- 1/8 cups - salt
- 1/8 cups - freshly ground black pepper
Directions:
1. Preheat oven to 400 degrees. Pierce sweet potatoes with fork. Bake for 45-60 minutes until tender. Cut potatoes in half, lengthwise; scoop out flesh into bowl, and set aside.
2. In a medium saucepan, heat butter, syrup, orange zest and balsamic vinegar over medium high heat. Remove from heat; add sweet potatoes and mash together with butter mixture. Season with salt and pepper.
