Par-cook the bacon on a foil-lined baking sheet first so you can toss the Brussels sprouts with some of the rendered fat for extra flavor.

Ingredients:
- 1 pounds - whole Brussels sprouts
- 4 slices - smoked or regular bacon, cut into 1/2-inch pieces
- 1/2 teaspoons - salt
- 1/4 teaspoons - ground black pepper
- 1/4 cups - extra virgin olive oil (OR less if you pour the bacon fat into the mix)
- 3 tablespoons - pure maple syrup
Directions:
Preheat the oven to 400 degrees F and line a rimmed baking sheet with aluminum foil.
Trim and clean the Brussels sprouts; cut any large ones in half. Transfer to a large bowl.
Add bacon, salt and pepper; drizzle in the oil and syrup. Toss until well coated.
Transfer all to the prepared baking sheet and spread out in a single layer.
Roast in the preheated oven until bacon is crispy and sprouts are caramelized, about 20-30 minutes, stirring halfway through.
