This is a very flexible recipe. If you can't find mango, substitute crisp, peeled and cored apples. Vary fruit and chile amounts to taste.

Ingredients:
- 1/2 cups - sweetened, dried cranberries
- 1/4 cups - lime juice
- 1 1/2 cups - peeled and chopped mango
- 2 - to 4 fresh jalapenos seeded and chopped
- 2 cloves - garlic OR 1 shallot minced
- 2 tablespoons - chopped cilantro
Directions:
Soak cranberries in lime juice 20 minutes. Reserve juice and roughly chop cranberries.
Combine all ingredients, including reserved juice. Allow to stand for an hour before serving.
