Mango-Cranberry Salsa

Ingredients:

  1. 1/2 cups - sweetened, dried cranberries
  2. 1/4 cups - lime juice
  3. 1 1/2 cups - peeled and chopped mango
  4. 2 - to 4 fresh jalapenos seeded and chopped
  5. 2 cloves - garlic OR 1 shallot minced
  6. 2 tablespoons - chopped cilantro

Directions:

Soak cranberries in lime juice 20 minutes. Reserve juice and roughly chop cranberries.

Combine all ingredients, including reserved juice. Allow to stand for an hour before serving.
