Mambo Chicken with Mango Salsa

Ingredients:

  1. 8 - boneless, skinless chicken thighs or 4 breasts
  2. 3 cloves - garlic minced
  3. 2 tablespoons - freshly grated ginger
  4. 1/4 cups - soy sauce
  5. 1/4 cups - freshly squeezed lime juice
  6. 2 - mangos peeled, pitted, cut into 1/4-inch cubes
  7. 3 tablespoons - freshly squeezed lime juice
  8. 2 - jalapeno peppers seeded, membranes removed, minced
  9. 3 - green onions finely sliced
  10. 2/3 cups - lightly packed cilantro leaves stems discarded, coarsely chopped

Directions:

Put chicken and all main ingredients into an oven proof baking dish; combine evenly to mix. Cover and leave in refrigerator to marinate for 2-4 hours.

Make salsa:
Combine all salsa ingredients in a bowl and mix thoroughly with fork. Reserve.

Preheat oven to 375° F. Bake chicken dish for 25 minutes or until chicken is cooked through.

To serve, spoon a generous serving of salsa onto plate and top with chicken.
