Make-Ahead Microwave Friendly Breakfast Bowls

Ingredients:

  1. - chopped seeded tomatoes
  2. - chopped onions
  3. - crumbled feta cheese
  4. - diced ham
  5. - diced onion
  6. - shredded sharp cheddar cheese
  7. - crumbled, cooked sausage
  8. - chopped slices of American cheese
  9. - chopped red pepper
  10. - chopped onion
  11. - salsa
  12. - cooked ramen noodles
  13. - chopped Canadian bacon
  14. - crushed seaweed chips
  15. - soy sauce and sriracha sauce
  16. - finely chopped roasted red peppers
  17. - crushed tomatoes
  18. - garlic powder
  19. - ground cumin
  20. - touch of paprika

Directions:

For each serving, place 3 tablespoons of filling ingredients per egg. Store prepped "mugs" in fridge covered with plastic or a lid for up to 7 days; simply mix in egg(s) before cooking.

Crack egg(s) directly into cup with prepped ingredients; add salt and pepper and stir.

Microwave for 45 seconds at 100% heat; stir and microwave again in 15-second increments until cooked through.

Don't worry if eggs don't look completely set when you pull the cup from the microwave; they'll continue to cook in the hot mug.
