Make Ahead Big Batch Bran Muffins

Ingredients:

  1. 7 cups - bran flakes
  2. 5 cups - flour
  3. 5 teaspoons - baking soda
  4. 2 teaspoons - salt
  5. 3 cups - white sugar
  6. 1/2 cups - oil
  7. 1/2 cups - melted margarine or butter
  8. 1 quarts - buttermilk
  9. 4 - eggs lightly beaten

Directions:

Mix dry ingredients in a large bowl.

Mix wet ingredients in a bowl.

Stir wet ingredients into dry.

Refrigerate at least 24 hours but up to 7 weeks.

Bake at 350F for 25 to 30 minutes.

Makes a good 3 dozen muffins.
