This recipe can be made vegetarian as well by eliminating the ground poultry and substituting it for ground-beef style soy crumbles. There are 2 brands I'm familiar with Boca Crumbles are my favorite and Morningside crumbles. Both are essentially crumbled up versions of veggie burgers. Suggestions for serving: This dish can be served in a bowl topped with a sprinkle of cheese or along side lime baked corn tortillas, with corn niblets or with brown rice. For a real treat if you're not following a dairy free regiment, bake a cup of this with a serving of Mac n Cheese on top. Allow the mac n cheese to crisp up and serve. YUM! Directions:
1 lb package of ground chicken (you can use ground turkey or boca crumbles for a vegetarian version)
1/2 can of tomato sauce
1 can of tomato paste
1 can of red beans
1 can of cannellini (white kidney beans)
1 can of black beans
1 spanish onion
4 cloves garlic (you can add more I personally use 6)
2 tsps. of cumin
2 tsps. of paprika
2 tsps. of chili powder
1/2 tsp. chipotle chili powder - very hot!
1/2 cup water
Sauté onions and garlic with ground meat (meatless) of choice in a large cooking pot (3 quart should do it). When chicken is cooked, add can of paste and let simmer until you see the paste cook a little as it will turn a brighter orange. Add spices then add the beans. Add half the water. Let it all simmer and cook for about 20-30 minutes. Continue to add water in the last phase so it doesn't dry out and doesn't stick to the bottom.
Sprinkle with chopped cilantro & serve with a wedge of lime on the side to sprinkle over. Suggestions for serving:
