Maash Daal

Ingredients:

  1. 2 tablespoons - olive oil
  2. 2 cups - maash (urad) lentils
  3. 1 - medium yellow onion peeled, finely chopped
  4. 1 teaspoons - ginger peeled, finely chopped
  5. 1 cloves - garlic peeled, finely chopped
  6. 1/2 teaspoons - turmeric
  7. 1/2 teaspoons - coriander powder
  8. 2 cups - purified water
  9. - sea salt to taste
  10. - chili powder to taste
  11. 2 - tomatoes finely chopped
  12. - fresh cilantro and chilies for garnish

Directions:

Wash lentils and soak in warm water for 1 hour.

Heat oil in saucepan, add onions and cook 'til lightly browned.

Add ginger and garlic, spices and tomatoes and stir for a few minutes to make a paste.

Add lentils and water, and then bring to a boil.

Reduce heat and simmer on low to medium heat for 30 minutes.
