Lyonnaise Potato Quiche

Ingredients:

  1. - 9-inch unbaked pie shell
  2. 1 - egg white slightly beaten
  3. 2 cups - grated Swiss cheese
  4. 4 - eggs
  5. 1 cups - half-and-half OR light cream
  6. 1/4 teaspoons - salt
  7. 1/8 teaspoons - nutmeg
  8. - dash of pepper
  9. 2 cups - sliced potato 1/4-inch thick
  10. 1 cups - chopped onion
  11. 1 - medium green pepper cut into 1-inch cubes
  12. - salt and pepper

Directions:

Brush inside of pie shell with egg white; refrigerate. Preheat oven to 375 degrees F.

In medium bowl, with a wire whisk, combine eggs, half-and-half, salt, nutmeg and pepper just until combined.

In 2 cups boiling water, in medium skillet, cook, covered, sliced potatoes, onion, and green peppers with 1/4 teaspoon salt and dash of pepper for 5 minutes or just until partially tender. Drain well.

Sprinkle 1 cup of grated cheese into bottom of pie shell. Over grated cheese, overlap potatoes and green pepper in bottom of prepared dish. Sprinkle with remaining cup of cheese; pour egg mixture over top.

Bake 35 minutes or just until puffy and golden. Remove to rack to cool 10 minutes.

If desired, garnish center with bouquet of parsley.
