Luscombe Farm Jalapeno Chicken

Ingredients:

  1. 1 jars - jalapeno jelly 9 ounces
  2. 3 tablespoons - pineapple juice
  3. 1 pounds - skinless, boneless chicken breasts
  4. 1/4 teaspoons - cracked black pepper
  5. 1/4 cups - sour cream
  6. - parsley sprigs optional garnish

Directions:

Combine the jelly and pineapple juice in a small saucepan. Cook over low heat, stirring occasionally until melted and thoroughly heated.
Sprinkle pepper over chicken. Coat a large skillet with cooking oil spray; place over medium-high heat until hot. Add chicken and saute 4-5 minutes on each side, until cooked through.
Spoon sauce onto individual plates. Top with chicken. Dollop with sour cream and garnish with parsley sprigs, if desired.
