Low-fat Chicken Enchiladas

Ingredients:

  1. 2 cups - Shredded Chicken
  2. 1 cans - Old El Paso green enchilada sauce
  3. 1 cans - 98% fat-free cream of chicken
  4. 1 cups - Low-fat cottage cheese
  5. 1/2 teaspoons - Garlic salt
  6. 1 teaspoons - Cumin
  7. 1 teaspoons - Chili powder
  8. - Red pepper flakes to taste
  9. - Salt to taste
  10. - Pepper to taste
  11. 1/4 cups - Cheddar cheese
  12. 10 - Light tortilla shells

Directions:

Mix together all of the ingredients (except the tortilla shells) in a medium-sized mixing bowl. Put a little of the mix in each tortilla shell, roll up, and place in a 9x13 baking dish. Spread any leftover mixture over the top and sprinkle on a LITTLE bit of cheese. Bake at 350° for 20-25 minutes. Serve with olives, tomatoes, salsa, avocado, lettuce, or anything else you like on your enchiladas!
