Low Carb Paleo Keto Blueberry Muffins

Ingredients:

  1. 2 1/2 cups - blanched almond flour
  2. 1/2 cups - erythritol
  3. 1 1/2 teaspoons - gluten free baking powder
  4. 1/4 teaspoons - sea salt
  5. 1/3 cups - coconut oil measured solid, then melted. Can also use butter
  6. 1/3 cups - unsweetened almond milk
  7. 3 - large eggs
  8. 1/2 teaspoons - vanilla extract
  9. 3/4 cups - blueberries

Directions:

1. Preheat oven to 350 degrees. Line a muffin pan with paper cups.
2. In a large bowl, stir together the almond flour, erythritol, baking powder and sea salt.
3. Mix in the melted coconut oil, almond milk, eggs and vanilla extract. Fold in blueberries.
4. Distribute the batter evenly among the cups. Bake for 20-25 minutes, until the tops are golden and an inserted toothpick comes out clean.
