Spinach and Mushroom Casserole

Ingredients:

  1. 12 ounces - bag of Spinach
  2. 1/2 pounds - sliced mushrooms
  3. 3 whole - green onions
  4. 1 whole - onion
  5. 2 cloves - garlic minced
  6. 12 whole - eggs
  7. 5 tablespoons - unsalted butter
  8. 16 ounces - cottage cheese
  9. 12 ounces - sharp cheddar cheese shredded
  10. 1/2 teaspoons - black pepper

Directions:

Pre-heat oven to 350. Use 1 T butter to grease 13x9 baking dish.
Heat 4 T butter in a large saute pan and saute onions, mushrooms and garlic for 3-4 minutes until onions are translucent and mushrooms are soft.
Add spinach, a handful at a time and saute. Cover skillet and let spinach wilt, about 5 minutes.
Let cool, drain excess liquid, and chop more finely.
In a separate bowl, whisk eggs, cottage cheese, cheddar cheese and pepper. Add cooked spinach and mushroom mixture.
Mix well and pour into baking dish.
Bake for 45-50 minutes of until top is golden brown and center is done.
