Long Shortcake

Ingredients:

  1. 2 1/4 cups - Bisquick Mix
  2. 1 1/2 cups - Sugar
  3. 1 whole - Egg
  4. 3/4 cups - Cream
  5. 2 tablespoons - Sugar
  6. - Small Pats of Butter
  7. 1 quarts - Sugared Peaches
  8. 1 cups - Any Other Fruit
  9. - Ice Cream or Whipped Cream for Serving

Directions:

Combine Bisquick and sugar. Beat the egg in a measuring cup and then add enough cream (or butter+ milk) to measure 3/4 cups. Stir liquids into the Bisquick mix to form a stiff dough. Shape dough into a ball and knead approximately 10 times.

Place on greased cookie sheet, patting into an oval shape and then rolling into an oval 6" x 14". Pinch edges. Sprinkle 2 tablespoons sugar over the dough. Bake at 425° for 15 minutes.

Remove from oven and place small pieces of butter over top. Add sugared peaches and other fruit. Place ice cream or whipped cream down center.
