    A few years back, we decided to start a tradition of having a family multi-course seafood dinner for New Year's Eve. We would have some sort of seafood for each course - appetizer or salad, soup, various fish, shrimp or crab dishes for main course, etc. It was great fun planning the various parts of the meal ahead of time, and this Lobster Bisque quickly became a staple since everyone enjoyed it so much.

Ingredients:

  1. 3 tablespoons - butter
  2. 1/4 cups - fresh mushrooms
  3. 2 tablespoons - onion
  4. 2 tablespoons - celery
  5. 2 tablespoons - carrot
  6. 1 cans - chicken broth
  7. 1/8 teaspoons - salt
  8. 1 pinchs - cayenne pepper
  9. 1 1/2 cups - half-and-half
  10. 1/2 cups - dry white wine
  11. 1/2 pounds - lump lobster meat

Directions:

1.Melt the butter in a large saucepan over medium-low heat. Add the mushrooms, onion, celery, and carrot. Cook and stir until tender, about 10 minutes. Stir in the chicken broth, and season with salt and cayenne pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.

2. Add 1/4 cup of the lobster meat, and use a stick blender to blend the ingredients in the pan until mixture is smooth (or very carefully pour the vegetable and broth mixture into the container of a blender; cover, and process until smooth; return to the saucepan).

3. Stir in the half-and-half, white wine, and remaining lobster meat. Cook over low heat, stirring frequently until thickened, about 30 minutes. (If you desire additional thickening, stir 1 teaspoon of cornstarch with 2 teaspoons cold water and add to the soup during the last 5 minutes of cooking.)
