- 20 whole - lemon rinds fresh, washed
- 1 3/4 liters - grain alcohol 190 proof
- 1 3/4 liters - water
- 3 cups - granulated sugar
Directions:
1. Peel the lemons, being very careful not to get too much of the pith, this will make it bitter.
2. Put peels in to glass jar and cover with grain alcohol. Screw lid on.
3. Store in dark room for 2 weeks and shake around periodically.
4. After two weeks, heat water and sugar until dissolved, and let mixture cool to room temperature.
5. Strain rinds in to a cheesecloth and squeeze alcohol out. Put peels back into glass jar and then pour 2 cups of the sugar mixture over it.
6. Strain it back into the bottle.
7. Discard the peels, pour the cooled water through a cheesecloth using a funnel.
8. Store in freezer.
9. Serve in small shot glasses for a special occasion or to get a party started.
