Lightened Coca-Cola Cake

Ingredients:

  1. 1/3 cups - Chopped walnuts or pecans For icing
  2. 1/2 teaspoons - Vanilla extract For icing
  3. 1 cups - Cola (NOT diet)
  4. 1/2 cups - Water
  5. 1/2 cups - Canola oil
  6. 1/4 cups - Cocoa powder
  7. 1 1/2 cups - Miniature marshmallows
  8. 2 cups - Unbleached flour
  9. 1 1/2 cups - Sugar
  10. 1 teaspoons - Baking soda
  11. 1 whole - Egg
  12. 2 - Egg whites only
  13. 1/2 cups - Low-fat buttermilk
  14. 1 tablespoons - Vanilla extract
  15. 2 tablespoons - Cocoa powder For icing
  16. 3 tablespoons - Cola, NOT diet For icing
  17. 1/4 cups - Butter For icing
  18. 1 1/2 cups - Powdered sugar For icing

Directions:

CAKE PREPARATION:
1. Coat a 9X13-in. baking pan with nontick spray and set aside.
2. Place cola, water, oil and cocoa powder in a saucepan; bring to a boil over medium heat. Remove from heat and add marshmallows. Stir until melted; set aside.
3. Combine flour, sugar and baking soda in large mixing bowl. In another bowl, beat egg and egg whites together, then stir in buttermilk and vanilla. Stir the liquid mixture into the dry mixture then add the warm cocoa mixture.
4. Pour batter into prepared baking pan. Bake for 45 min. or until toothpick inserted in center comes out clean.

FOR ICING:
1. Place cocoa powder, cola and butter in saucepan. Bring to a boil over low heat. Remove from heat and stir in powdered sugar, nuts and vanilla; mix well.
2. Spread icing over warm cake in baking pan.
3. Cool on a wire rack.
