Lettuce Salad with Cranberry Vinaigrette

Ingredients:

  1. 1/2 cups - pecan halves
  2. 2 tablespoons - sugar
  3. 1 bags - romaine leaf lettuce (10 oz)
  4. 1 cans - mandarin oranges (11 oz)
  5. 1/2 cups - dried cranberries
  6. 1/3 cups - thinly sliced onion
  7. 1/2 cups - olive oil
  8. 3 tablespoons - cranberry flavored white wine vinegar
  9. 2 tablespoons - sugar
  10. 1 teaspoons - Dijon mustard
  11. 1/4 teaspoons - salt

Directions:

Make Cranberry vinaigrette by shaking oil, vinegar, sugar, mustard and salt together in a tightly covered container. Heat pecans and sugar in skillet over medium heat for 5 minutes, stirring constantly until sugar begins to caramelize. Transfer pecans to waxed paper. Let cool, break apart. Toss dressing and remaining ingredients. Sprinkle with pecans.
