Lemony Sugar Snap Pea Salad

  1. 1/2 pounds - Sugar Snap Peas trimmed; about 2 cups
  2. 2 tablespoons - Lemon Juice
  3. 1 1/2 tablespoons - Olive Oil
  4. 1/4 teaspoons - Salt
  5. 1/8 teaspoons - Black Pepper
  6. 2 - Kirby Cucumbers halved lengthwise and thinly sliced
  7. 1/4 cups - Feta crumbled
  8. 3 tablespoons - Fresh Chives chopped
  9. 3 tablespoons - Fresh mint leaves thinly sliced


Bring large saucepan of water to boil. Add snap peas and cook until just bright green and crisp-tender, 1-2 minutes. Drain and rinse under cold running water; drain again. Thinly slice snap peas lengthwise.

To make dressing, whisk together lemon juice, oil, salt, and pepper in medium salad bowl. Add snap peas, cucumbers, feta, chives and mint. Toss until mixed.
