Lemony Blueberry Muffins

Ingredients:

  1. 3 tablespoons - oleo
  2. 1/4 cups - brown sugar
  3. 1 - egg slightly beaten
  4. 2 teaspoons - lemon juice
  5. 1 1/2 teaspoons - grated lemon rind divided
  6. 1 1/2 cups - unsifted flour
  7. 1 teaspoons - baking powder
  8. 1 teaspoons - baking soda
  9. 1/4 teaspoons - salt
  10. 1 cups - plain yogurt
  11. 3/4 cups - frozen blueberries
  12. 1 tablespoons - granulated sugar

Directions:

Cream together oleo and brown sugar; beat in egg. Then add lemon juice and 1 teaspoon lemon rind.

Stir in dry ingredients and blueberries.

Spoon into muffin tings and top with granulated sugar and remaining lemon rind.

Bake at 375 degrees F for 25 to 30 minutes.
