Ingredients:
- 3 tablespoons - oleo
- 1/4 cups - brown sugar
- 1 - egg slightly beaten
- 2 teaspoons - lemon juice
- 1 1/2 teaspoons - grated lemon rind divided
- 1 1/2 cups - unsifted flour
- 1 teaspoons - baking powder
- 1 teaspoons - baking soda
- 1/4 teaspoons - salt
- 1 cups - plain yogurt
- 3/4 cups - frozen blueberries
- 1 tablespoons - granulated sugar
Directions:
Cream together oleo and brown sugar; beat in egg. Then add lemon juice and 1 teaspoon lemon rind.
Stir in dry ingredients and blueberries.
Spoon into muffin tings and top with granulated sugar and remaining lemon rind.
Bake at 375 degrees F for 25 to 30 minutes.
